Cravings

Sometimes I feel like I am a pregnant woman.

Stay with me here, I’m not trying to freak you out but sometimes I have serious cravings for particular food.  It’s like if I can’t eat three sprinkled donuts in the next five minutes my stomach may eat itself and my head may explode.  This got me thinking what is going on?  How come I can crave a cheeseburger while I am eating dinner? Why are cravings assaulting me irregardless of time of day, or hunger?  Is it the full moon?  Am I some mutant human that craves various foods at various times, morphing me into a über unpleasant person with only one goal in mind?  While I would be ok with that if it gave me X-Ray vision or the ability to fly to the nearest donut shop, I don’t think this is happening.  So I decided to do a little research.

I discovered that the body is really freaking cool.  According to a Discovery Health article, hunger comes from the body while cravings come from the mind.  When you are hungry a hormone called ghrelin is released and tells your mind, specifically the hypothalamus (a really awesome thing that regulates a lot of body functions) to “GET ME FOOD!”  The hypothalamus then tells the rest of the body, “Hey let’s go get some food…” and you can figure out the rest from there.  But when you have a food craving your mind takes over.  It was believed that cravings were your body’s way of getting a specific nutrient, but scientists have recently decided this isn’t the case.  Instead, according to this article, food cravings follow a similar neurological path as drug addiction.  The same part of your brain is used, usually pulling a particular food from a memory and then urging you to get this food.  Once you eat it (usually something sweet in my case) your brain rewards you with dopamine, which is the “feel good hormone.” According to the article “Neurologically speaking, that fast food joint isn’t much different from a person selling drugs.” Hmmm I guess that makes sense, whenever I think about In and Out Burger I do get pretty ravenous and start freaking out that I can’t get it.  This probably helps explain why so many Americans are overweight! Instead of being addicted to drugs, the majority of Americans are addicted to greasy, fatty fast food…and maybe some drugs.  Hey me too! On the food part, not the drug part, unless coffee is a drug, which I am beginning to think it is.

Anyway back to the brain and cravings.  It turns out your cravings and taste preferences for different foods are created in the WOMB! That’s right, if you hate tomatoes, thank your mom.  During the second trimester your sense of taste and smell develop based off what your mom was eating.  And if your mom was more adventurous while she was pregnant, eating a variety of food, when you born you were probably more open to trying new foods!  Crazy.

It turns out another big portion of cravings come from memory.  After all you can’t really crave something you have never had.  I think you can crave a combination of foods you have never had, but that bacon and ice cream combo you are thinking of is made up of two different tastes you already know and love.  That is why I crave In and Out Burger I think, because every time I have had it I was on vacation.

So what are the consequences?

Well food addicts, like drug addicts constantly increase the amount of their given vice to get that “high”, meaning every time you give into your food cravings for donuts, or cheeseburgers you are lifting your threshold higher so next time you will need to eat three burgers instead of two to get the same content feeling (dopamine).  I don’t know how true this is though because every time I give into a donut craving I can still only eat 2-3, not 4-5, but maybe I don’t give in often enough to make a difference.  It is crazy to me that food = drugs for some people.  Actually not some people, most people.  It is a vicious circle too because the foods we crave are so easily/quickly accessed and so cheaply purchased. I am blessed by the fact that I get to be married to a nutritionist, who has totally changed my eating habits, and made me more aware of what I am eating, too bad everyone couldn’t be married to one.  I think it also helpful to be active, it is hard to survive a long training ride on donuts and cheeseburgers.  I think I would die.

So what does all this mean?

Well for me it means that food cravings are normal.  Everyone has them, it just varies from person to person on how often you indulge.  Kaleigh is always saying “Everything in moderation.” To try to live your life without ever giving into your food cravings is just plain stupid.  You will be miserable.  In fact if you are on a diet or trying to lose weight giving in every once in a while will make you more successful in the long run.  Think about it this way, if you can have one snickers bar a week then you will be less likely to break down one day and eat a gallon of ice cream.  It also means that the body is AMAZING! There are so many complex reactions and processes going on every second it makes it hard for me to understand how people can’t acknowledge that some greater power is responsible.  It all works to perfectly, at least in my opinion.  Lastly it means Kaleigh’s teachings are rubbing off on me.  Before I met her I wouldn’t have cared what I ate as long as it tasted good, but now I am reading labels at grocery stores and am trying to get rid of processed foods…except for the occasional donut!

There are just certain songs that make you feel free and mysterious (Pink Moon by Nick Drake).

There are just certain holidays that you can’t help but reminisce about your childhood (Easter reminds me of: Little Debbie Nutty Bars in my basket, frilly church dresses and tights and a jelly bean scented stuffed bunny I got one year).

There are just certain smells that make you feel so unbelievably comfy, cozy and utterly content in that very minute (fresh brewed coffee).

There are just certain sounds that make me think of fresh cut grass on a ball field and early morning games with my dad (an aluminum bat being dropped on the ground outside of our apartment).

There are just certain times that you can’t get everything done that you wanted to (finish my detox blog posting, among other things).

With all that has been happening with my job (getting promoted) and trying to relax and make delicious food, I just have not seemed to have a lot of extra time to pursue wrapping up this whole endeavor!

We last left off on day 20:

Breakfast that morning was my new favorite, the Cashew Cream smoothie. I really love this smoothie!

It is so milky smooth and white. It almost seems like you’re having a milkshake from a burger joint!

While at work I had a surprisingly great Larabar, one of their new flavors, Blueberry muffin. I’ve heard a couple people say that they did not like this flavor, but this was the best Larabar I’ve had in a long time!! I worked a long time before I went for lunch so I also had some rice crackers and hummus. 

Lunch was, (surprise, surprise!), another choco-cherry smoothie. I didn’t feel like scooping this one out so I made it more smoothie-like rather than an ice cream texture. 

In this beautiful cup was:

  • 1 c frozen cherries
  • 1/2 c apple juice
  • 1 serving Amazing Grass chocolate GreenSuperfood
  • 1 T Barlean’s Mango-Peach Fish oil
  • 1/2 c almond milk
  • Vanilla Clearvite
As I got home, I was having a sweet tooth attack, and I really just wanted a little something decadent.

What this equated to, was a gluten free english muffin. One side was topped with Sunbutter and dried blueberries and the other had a smidge of Earth Balance soy free spread and a sprinkle of sugar and cinnamon…. yuuuuuum.

Dinner was AmaZing!! I got the idea from another blogger, but did a few twists. I made a sweet potato and kale frittata. With some grapes on the side, it blew my mind. I even went back for seconds!

Day 21 went a little like this:

Breakfast was a Dreamy Creamy. I just couldn’t help myself. The last day had to end with it!

After eating this, we got ourselves and the pups ready to head out for a hike in Boulder. As we drove there I told Kyle that Boulder will always have a special place in my heart. It is where I first fell in love with Kyle, where I took my SAT’s (really bad score), and where we got married, among other great memories. It was a beautiful day for a hike! Unfortunately our dogs were not all that well behaved (they just get so excited!) and instead of really getting to enjoy the park, we instead had to deal with our unruly pups (which equals an 2 angry people). After about and hour and a half hike, we moved out. On the way home we snacked on some homemade trail mix, sunflower seeds, dried apples, dried blueberries and almonds.I was really craving a hummus and veggie sandwich on the ride home, so that is exactly what I threw together!!

This baby rocked my world!! The sandwich included:

  • Gluten free english muffin, toasted
  • hummus
  • tsp mayo + 1/2 tsp dijon mustard + a light sprinkle of curry powder, all mixed up
  • cucumber, thinly sliced
  • spinach
  • carrot ribbons
On the side I had the rest of the carrot and black olives…a PERFECT lunch!!
I can’t remember eating a snack, or if I did that afternoon, it went undocumented!
The rest of the day was spent taking a little nap, reading and then heading off to a Denver bar and grill for dinner. I cheated a smidge and had a “gluten-free” hamburger with guacamole and fries… which that basically meant, “no bun”. I was a little taken aback by my bun-less wonder, but it still was delicious and a bit of a splurge after 21 days. After dinner was a special treat….LET’S GO ROCKIES!!!! We actually left early because it was ridiculously cold and we just couldn’t hold out any longer, and they lost, but it was still great to get to go see them!! We’re both looking forward to more games that are much much more weather friendly.
So there you have it!! 21 days of detox meals! I promise a more in-depth recap of how I’m feeling and where do I go from here. I just think this has been a long enough post for now, and I hear sweet nothings coming from my pillow…

It’s getting very close to “the end”. But let’s not jump ahead before I’ve shared with you another couple days’ meals and snacks. Here comes a new smoothie recipe!! This is the contenda’ I was talking about. The bottom of this cup looks pink, but believe me it’s all milky colored.

Cashew Cream- the night before I placed the following in my Vitamix:

  • 1/2 c raw cashews
  • 1/2 c almond milk
I put my lid on and put it in the fridge to soak overnight. The next morning I added:
  • 1 banana
  • tbsp Barlean’s Pina colada Fish Oil
  • a couple shakes cinnamon
  • 3 ice cubes
  • another 1/4 c almond milk
  • Vanilla Clearvite
I am in looooove with this baby! After going to the most amazing church service we came home to snack on 1/2 an apple and sunbutter mixed with cinnamon and a tsp of agave. Green tea on the side and you’ve got a perfect leisurely snack!I decided that I needed a nice big salad for lunch. I’ve noticed with these big salads that unless I’ve got everything pre-chopped and ready to go, adding a bunch of components takes a good deal of time. That means that it is best if you take time when you’re not in a rush to do prep so that when you are rushed you can just throw it all together. 
This salad had:
  • brown rice
  • black olives
  • homemade hummus
  • chopped carrot
  • steamed broccoli
  • sliced cucumbers
  • spinach
  • tahini drizzle
Shortly after I had (another!) cocoa date-nut bar.
I’ve had a request to post the recipe for these guys. I really got the recipe from Ashley. But what I do is grind about a 1/2 c of hazelnuts and a 1/2 c of almonds until they are mealy. You can grind them finer if you wish, but I like mine slightly chunky. I remove the nuts out of the food processor and stick them in a bowl. Next I remove the pits of 10 large medjool dates. I stick them in the processor and let it whir until it balls up. I then add the nuts back to the processor, along with a tbsp of coconut oil, 1/2 tsp-1tsp salt and 2 T of cocoa powder. Turn on the processor and let it go until it all comes together, about 15 seconds. Turn out the dough into a bowl and shape it how you want it. Refrigerate leftovers.
I had to go to work this evening and for dinner, had another familiar smoothie. 
  • frozen cherries
  • fresh ginger
  • cinnamon
  • cardamom
  • tbsp cocoa
  • Chocolate Amazing Grass GreenSuperfood
  • almond milk
  • vanilla Clearvite
And on the side I wanted something a little more.More hummus and rice crackers.
So, that was day 19. Boom baby!

days 17 + 18

I will be frank with you. After our celebratory meal I did not sleep well and felt an uneasy stomach the next day. Nothing bad, but more so, embarassing… I’ll leave it at that.

I feel like in the past few days I have done hardly any cooking, which is true because I’ve been having two smoothies a day. It’s fine because I am loving the combinations I’ve been coming up with and truth be told, I’ve been craving them. But regardless, its been strange to not have “meals”. You know, the kind you need utensils to consume. Different textures, tastes and warmth.

But like I said, I haven’t been eating poorly! Quite the contrary! Please, let me show you!

Breakfast on Friday:

Another Dreamy Creamy… what can I say, I’m obsessed… although I may have found another contenda’! More to come on that later.

I’ll be honest with you, again… this day’s eats are a lot of repeats. I promise I’ve been dreaming up some goodies in the past couple days and you’ll see these coming attractions soon enough!

Snack time… p.s. I reeeeallly love snack time. It’s so wholesome 🙂 Another cocoa date-nut bar. Lunch was another rushy-roo… warmed up minestrone soup and grapes. This soup is really stretchin’ out!As an lunch time dessert I had a “dial”, as I like to call it, of my favorite chocolate. Of which I am now realizing that I didn’t even take a picture of the blessed confection!! Taza chocolate with cinnamon. Cinnamon! I love this so much because its rich and grainy and in my mind seems what the Aztecs would have eaten, just sayin’. I looove this and want to try all the flavors, but can never make myself get a different one.

After work I had another snack time. Apple chips. They look much more like apples in this picture as compared to the one in my last post. In the last post, for some reason they remind me of rodent skeletons…odd!The rest of the evening was where things got a little strange… I had “ice cream” for dinner and then had another mini dinner after that. Cherry-chocolate “ice cream” with coconut shreds and 1/2 ginger snap on top and….

a really bad picture of egg salad with rice crackers. In my two-egg salad was about 2 tsp of mayo (soybean free), tbsp Bubbie’s relish (corn syrup free), tsp dijon mustard, salt and pepper. It was perfect. I also made PERFECT gluten containing (and one of my best baked goods) peanut butter cookies this evening as a going away present for my manager. There are still a few sitting around on my counter that are taunting me in the face! So completely rude!! It has taken several prayers and a few shots of aloe to keep me from consuming those. You have no idea how bad I want to smother one of those with some delicious jelly and be done with it!!!

Saturday (yah!): My day off and keep in mind that in my last post, I said I munched all day. Now you will soon see proof..

Breakfast was super refreshing and fun all thanks to some fresh ginger. This spicy smoothie had in it:

  • an inch of fresh peeled ginger
  • 4 fresh strawberries
  • 3/4 banana
  • 1/2 c apple juice
  • 1/2 c almond milk
  • 1/2 c frozen berry mix
  • Barlean’s Pina Colada Fish Oil
  • Vanilla Clearvite
Snacks through out the day included…rice cake with sunbutter and jelly, grapes on the side…

more cherry ice cream with ginger snaps on top…homemade hummus with 1/2 apple and rice crackers…

And finally(!) my dinner was….This was two small potatoes cooked in the microwave for about 4 minutes, cut into chunks and sauteed in canola oil. I added salt, pepper, cayenne, chili powder, garlic powder, and cumin. Then I scrambled an egg with a little dash of almond milk. I topped it all with corn syrup-free ketchup and this meal topped of the days’ eats perfectly!

Today was one of those days that is fit for grilling some hot dogs or beef patties (both of which I can’t have right now).

Today was meant for sitting on your lovely porch with the nutritious sun rays beaming down on your exceptionally white legs and curling up with a book and your doggies laying by your side.

Today was meant for saying goodbyes and for dreaming up futures and new recipes.

Today was for munching all day long and trying my hardest not to break the rules and garble up 5 of the special and most amazing peanut butter cookies I made last night.

Today was meant for breaking records of how many times in one day I can use the Vita-mix (4).

Today was meant for children to laugh and play on their bicycles.

All of these things except for the weiners and cow went on today, and I loved it. Today I also realized that I am so behind on reporting my daily meals and eats. It has been a busy couple of days but I most certainly have been still tracking my foods everyday. Which means that there is much to catch up on! To save you from a ridiculously long post, I’ll split up the days. But I will tell you this; I have been eating a lot of good stuff lately!

Wednesday: This day of the week always seems to be a weird day. Dinner time takes place right when we are at youth group and my eating schedule does not allow me to want to have dinner before going. This means I am usually hungry afterwards. I’ve found that generally my body likes to be on a schedule so it does weird things when I don’t follow it.

Breakfast: I started my day off with these babies…I had the time and I just couldn’t help it. Gluten-free pancakes made with garbanzo bean flour, sorghum flour and coconut flour. I topped them with chia seeds, coconut shreds, blueberries, and agave nectar. You have no idea how much these babies hit the spot!!

Luckily Kyle and I had the day off together! We spent the day running errands and enjoying the day together. On a quick stop at home between them all I threw together a Dreamy Creamy smoothie.  I drank this in the car on the way to our next stop, which just so happened to be in close proximity to a Whole Foods. After window shopping on at a few stores, we went over there looking for a little extra somethin’. I went with a small serving their Indian lentil soup (amazing!) and some Greek potatoes (not so great). During the time between getting back home and heading off to go to youth group I snacked on some apple chips that we picked up at Costco and one of my cocoa date/nut bars. After youth group, I was feeling hungry. I thought that I could get away with eating a spoonful of sunbutter…But I was still vying for a little more. I had a small cup of the minestrone I made the other day. I didn’t get a picture of that though.

Thursday: I slept pretty poorly the night before… maybe too many calories too close to bed time. Breakfast was a fresh strawberry banana smoothie.

  • fresh strawberries, about 5
  • banana
  • Barlean’s mango peach fish oil
  • 1/2 c almond milk
  • 1/2 c apple juice
  • vanilla Clearvite

While at work I had a cocoa date/nut bar… it looks really weird in this picture though. Back at home for lunch I made a new smoothie…

Apple Kale(igh) Smoothie

  • small stalk celery
  • 3/4 c kale, stems removed
  • 1/2 c apple juice
  • 1/2 banana
  • juice of half a lemon
  • 1/2 c water
  • vanilla Clearvite
  • 3-4 ice cubes

I did not think I was going to like this because at first scent of the cup… I couldn’t help but think of a lawn, but as soon as I took a sip, I fell in love.

My afternoon snack was a rice cake with sunbutter with agave and chia seeds on top. I ate it as a quick snack as I was getting ready for a hot date. You see, the hot date was in lieu of good news and for a celebration. I got promoted!!! I am so excited about this!! Kyle so lovingly made reservations at a restaurant that we had been desperately wanting to go to for a very long time.

Root Down There couldn’t be a better place to go to while on the detox. The whole experience was awesome and they were completely accommodating to my restrictions. We decided to split a bunch of small plates and we loved every one of them! Gluten free sweet potato falafel (I tried to eat around the yogurt sauce).

Mussels with a curry-wine sauce and the BEST gluten-free bread I’ve EVER had to soak up all the sauce!!Grass-fed buffalo sliders with tomato jam, pickles and house made gluten free bun, sweet potato fries on the side. This was just “ok” to me. I actually only ate half of my slider so that I could save room for dessert…Vegan strawberry mango crumble with sorbet on top. I loved this sooooo much! I definitely ate more than Kyle ;). This meal was amazing and I was so comforted to know that my food did not have any allergens sneaking up on me. It was a great way to celebrate the great news!

Afterwards we went to my brother’s adult hockey league game. They were playing in the championship game and won! Way to go bro!!

2 weeks in

Well folks, I’ve been at this detox for two weeks now. I am still having a few issues here and there, but I would say things are 78% better. This really is a huge improvement for me. In my first post about this endeavor I stated that I would be moving to a vegetarian diet and also doing two Clearvite servings/smoothies a day. Essentially I have not been eating a lot of animal protein in the past two weeks so I’m thinking that maybe I need more. I’m going to play with this a little and see how things go. I am definitely going to add another smoothie a day so that I can try to get as many toxins moving as possible.

Alright, so let’s get caught up on yesterday and todays meals and snacks…

Monday mornings breakfast was a really delicious combination! Sweet Date Smoothie

  • 4 medjool dates, pitted
  • tsp cinnamon
  • 1 c almond milk
  • vanilla Clearvite
  • couple ice cubes

I loved this! It was so simple, not too sweet and deliciously smooth.

Lunch was especially beautiful and pretty tasty too!

This delightful looking plate included:

  • baby spinach and kale combo
  • strawberries
  • sprinkle balsamic vinegar
  • lentils mixed with celery, red wine vinegar, olive oil, salt, pepper and rosemary and tahini drizzle

I was running late in the morning so I was not able to pull together a decent snack. I grabbed some sunbutter to-go and then picked up a Larabar. I combined the two while at work. I promise there is a Larabar under there.

I have a little bone to pick. I’ve always been a fan of Larabars, but lately I have been very disappointed in them. Out of the last few I’ve had, I’ve only been happy with one. Do you eat Larabars? Have you noticed that sometimes you have a really great one, and then other times they don’t taste good or fresh at all? I also felt like this bar was shorter than normal. Are they short-changing us too? I’m sorry for my little rant, but their record with me has not been great lately.

Dinner was a kind of strange combination. It sounded good as I was getting it ready, but as I was eating it, it didn’t go as well as I had hoped. 

I had some leftover cod and then I baked a potato and topped it with sauerkraut and mustard.  The cod just didn’t taste good warned up again, and for some reason the sauerkraut  did not taste good to me either. When I combined the two on my fork, they tasted a lot better together. Go figure.

When I got home from work, I felt like having my “adult chocolate milk”. 

Amazing Grass GreenSuperfood and almond milk combo. I usually LOVE this, but shortly after I was not feeling good. It may have been my weird dinner rearing its ugly head. I actually woke up not feeling too great either.

Once I got breakfast in my stomach I was feeling much better. Today is the day I started with two Clearvite servings. First up was a delectable combination! 

Pumpkin Pie Smoothie Re-do

  • 1.5 c pumpkin puree
  • 3/4 c almond milk
  • fresh ginger, about an inch long piece, peeled
  • 1 medjool date, pitted
  • tsp cinnamon
  • fresh ground nutmeg, to taste
  • vanilla clearvite
  • sprinkle pumpkin pie spice on top!

Eventually I had to eat this with a spoon because it was so thick, it wouldn’t come out of the cup! I loved this version. I told Kyle, as I was sucking it down, that I felt like I was eating pumpkin pie filling. This was precisely what I was aiming for.

At work, I brought in a perfect snack, and also a repeat from the other day. I mixed up sunbutter with a little agave and cinnamon and brought a nice apple to dip with. 

It is very good, but business has really been picking up at work. This means crazy work-days. Again, this is good but it has been wearing me out!

I will tell you what didn’t wear me out, though!! I had “ice cream” for lunch today. I really wish that I could have added a topping like granola, but that is off-limits right now. Now that I am thinking about it, I wish I had added some shredded coconut and chopped nuts. What was I thinking? Oh well… there’s always tomorrow!

Choco-Cherry “Sorbet”

  • 1 c frozen cherries
  • serving Amazing Grass chocolate SuperGreens Food
  • Barlean’s strawberry banana flax oil
  • pinch ground cardamom
  • tbsp almond milk
  • 1/2 c water
  • vanilla Clearvite

And blend!!! Oooh this was so fun! Especially since I haven’t had anything like ice cream for a long time! Now I want to experiment making lots of ice creams… be on the look out.

After work, I was feeling very snacky. So on the docket was…

Welcome back cocoa-date nut balls!!!

And I picked these up today:

Gluten free ginger snaps. They are the best pre-made gluten free cookies I have tasted thus far. I had two of these as I was cooking dinner and two more after dinner.

I ran to our gym to do a little treadmill workout and then came back to snack on grapes and hit the showers. 

Dinner was very good! I made minestrone soup which I went off a recipe from Vegetarian Times magazine. No pasta, but it had sun-dried tomatoes. It was also super easy. I only wish that I had a nice crusty loaf of bread to dip in the soup. I did what I could with a rice cake with tahini and brewer’s yeast on top.

Now, I am lounging around on the couch with the dogs near and my husband to my left and watching House. I love this show and I love being home with my “kids” and husband!!!

two day update

Man this week really has taken it out of me! I needed to take a night off from blogging because I was so completely exhausted!! I’m trying to figure this all out as I don’t know if the fatigue is from the food I’ve been eating (like eating out at the training I went to) not eating enough calories or protein, adding the muffins into my diet or if its just toxins being released.  Here are my eats for the past two days:

Saturday

This morning I felt like switching things up. I got this method from Ashley by taking cooked millet and putting it in a saucepan. I added almond milk and let them simmer together until almost all the liquid is absorbed. I also added some frozen cherries to the mix. It becomes kind of like rice pudding. 

I love how the almonds look! It’s like they are floating!

After it was done cooking I mixed in cinnamon, cardamom (I’m really favoring this spice lately!) and a smidge of agave nectar. On top I added coconut butter, raw buckwheat groats, chia seeds and almonds. This turned out really well. The only problem was that I didn’t leave a lot of time for myself to enjoy it. I had to rush to eat it and it actually burned my mouth a little. No good!

My snack at work was 1/2 a grapefruit and a few almonds and walnuts. I don’t quite understand why people always cut their grapefruits in half and scoop. It never really works. I like it so much more when you eat it all, like you would an orange. Otherwise you miss out on all the juice!!

I had to run an errand on my lunch break so in the morning before work, I pre-made my lunch. Chocolate Cherry Smoothie

I got my very important task done and I had a delicious lunch!

When I arrived home from work I was wanting a little something sweet. Good thing I didn’t have some cereal in the house, because otherwise I may have eaten a whole box! Instead I went with the grain (ha) and didn’t fight the crumbly muffins. I crumbled them up in a bowl, warmed them up in the microwave and topped them with coconut butter. I ate them with a spoon and I loved it!

I made sure to put a little extra work into dinner as I had a bunch of fresh ingredients on hand. I made kale chips, spaghetti squash HEAB style (minus the butter) and my own concoction, which I’ve now named Spanish Cod.

Spanish Cod

Ingredients:

  • about 2 lbs. cod
  • 2 tsp dijon mustard
  • tsp olive oil
  • 1/4 tsp cumin
  • salt and pepper to taste
  • handful cilantro, chopped
  • 12 raw almonds, chopped

Method:

Preheat oven to 375 degrees. Line a cookie sheet with aluminum foil. Mix dijon, olive oil, cumin and salt and pepper in a small bowl. Place cod on the cookie sheet. Use a basting brush to brush 3/4 of the dijon mixture on to the cod. Put the cod in the oven and cook for about 12 minutes.

Meanwhile chop almonds and cilantro to a fine dice. Pull cod back out and quickly brush remaining mustard mixture on the cod. Press almond/cilantro mixture on top of the cod. Place back in the oven and cook until fish is flaking, about 5-10 minutes. Turns out great!!

After dinner, I crumbled and warmed another muffin, but ate it with almond milk instead.

Sunday

This morning I wanted to go super easy. I did another Dreamy Creamy but added cocoa. 

  • 1 banana
  • 1.5 tbsp sunbutter
  • 1 c almond milk
  • A couple shakes cinnamon
  • tbsp cocoa powder
  • tsp Barlean’s Omega Swirl Pina Colada

I’m not sure if this breakfast just didn’t work well for me, but from about 11 am on, I felt really low energy all day. My snack at work was strawberries topped with coconut shreds and almonds. 

Again at lunch I wanted to do simple. Really throughout the whole day, I just wanted easy. And easy I did. A rice cake with sunbutter and jelly and the rest of my cauliflower soup.

When I got home from work, all energy had fled from my body. But I knew it was going to be a while till we were able to get dinner. I snacked on the other half of the grapefruit from yesterday and a date filled with nut butter. 

It kinda looks like a cookie sandwich. Ha! I wish!!

Kyle arrived home with the doggies in tow. We decided to go it easy and pick up dinner at Chipotle. I got myself a nice chicken burrito bowl with lots of guacamole, cause I do love it ever so much!We were all set to pop in a movie from Netflix, but the dvd we got wouldn’t load! So we watched a Matrix trilogy movie and a little Curb Your Enthusiasm too. My after-dinner snack included some herbal tea, actually Sugar Plum Spice to be exact, and some delicious blueberries.

Now I’m off to sleep, sleep, sleep!!

an exhausting day 10

Detox. Day 10.

Today was an extremely weird day. There were highs and lows at every turn. I don’t want to go into too much detail currently because quite frankly, I am, well… exhausted.

Breakfast was the same as yesterday cause I loved it so much!

Kyle and I ran errands in the morning, which is where most of all the highs and lows came from. While out, we stopped at Costco and we got a green smoothie sample…It’s looks so ridiculously gross, but it was great! It had orange, pineapple, lime, banana, spinach and grape juice. We went back home very excited about our purchases… I’ll give you a hint…(!!!!!)and got to work making some lunch before we both had to get into work. My lunch was an Asian-inspired dish.

Faux Fried Rice– I can post the method later but it basically has in it scrambled egg, millet, garlic, fresh ginger, green onion, green beans and sesame oil. Not too shabby, I just needed a little more flavor. I also had another crumbly blueberry muffin with coconut butter. I’m still extremely disappointed in these muffins :(.  

At work I snacked on some almonds and walnuts… ooh bad picture, sorry!

Dinner was an odd combination, but it worked and kept me full!

I had a rice cake topped with smashed avocado (mixed with a little olive oil and salt and pepper) and topped it with lentils. On the side I had more curried cauliflower soup. As I was walking out the door, I had another applesauce to-go. 

Ok. I’m down for the count.

something got me!

Another busy day today and I’ll be honest with you, I’ve just lost a lot of steam. I started my day off with a great smoothie! In it was:

  • handful baby spinach
  • 3/4 c mixed frozen berries
  • 1/2 banana
  • 1 c almond milk
  • tbsp Barlean’s strawberry banana flax oil
  • pinch cardamom

As soon as I walked into work, I was running around getting stuff done. I made myself take a quick break to enjoy this little morsel…

A blueberry muffin with sunbutter atop! I’m having trouble with this whole gluten free baking thing. The taste is always great, but the texture is always off. You can read about my last incident here. These muffins taste great but they are super crumbly. As soon as you take a bite, they crumble into an avalanche of gluten-free despair. I follow the directions completely, so I don’t understand what is going on!

I tried not to rush as much for lunch today, so I went with an easy meal. I reheated curried cauliflower soup and did a faux pb&j on a rice cake. 

I very much prefer eating soup in a large coffee cup rather than a bowl. It’s so much better to heat it up in the microwave because you never burn your hand pulling it out! Plus it just feels more like comfort food to me in a coffee cup.

After getting back to work for a few hours and coming home, I had a fresh and non-grassy tasting gala apple. 

This evening I had a special dinner training for work. Eating out can get a little tricky while on a detox, and it DID get tricky. For starters we had preselected choices for us. We had a salad plus either a chicken dish (with cream), pasta dish (gluten), salmon dish with shoestring potatoes, and another salad (with no protein?). I ordered my salad without the preselected gorgonzola cheese. Another lady got my salad and was seconds to mowing down on it while simultaneously the waiter tried to give me a cheese plate…. the lady was like 20 years older than me too and we DID not look a thing alike so I’m not sure what happened… so I got a salad that I didn’t dress and she may have eaten off of. Awesome. 

Plus while waiting for our salads, I had to pass up a bursting basket of delicious handmade bread. And I know it’s good because Kyle and I have ate at this place previously. Anyways, the salad was delicious though. It was very fresh, which I think it came from the mixed greens. The vibrant earthy flavors came out them so much.

Dinner may have been the culprit. The culprit of the heartburn and indigestion currently happening. I went with the salmon. I though it would be the LEAST likely to have any “no-no’s”. 

The fish sat on top of fried tomatoes, which I avoided. The shoestring potatoes, I did eat. Not all of them, but I’m thinking that these guys were what did me in because all the way home I was burping up french fry-taste.

So here I am, somewhat confused, again about what exactly is going on. Something had to sneak into my meal that doesn’t go well with my system because I haven’t felt like this for almost two weeks…

More investigation required. I will be watching very closely.

But for now, I am going to bed. Kyle and I have an important meeting with the tax man, er, lady tomorrow morning. Nothing like waiting until the last minute, right?!

day 8 and a treat

Today was stop and go. I got up with a lot of things on my to-do list and I got most of them knocked off. This morning I made my favorite smoothie. I’ve renamed it too. I used to call it ‘funky monkey’ but now it’s Dreamy Creamy. I’ve named it this because that is exactly what the texture is.

  • banana
  • heaping tablespoon homemade sunbutter
  • a couple shakes cinnamon
  • Barlean’s Total Omega 3-6-9 Orange Swirl
  • 1 c almond milk
  • a couple ice cubes
  • vanilla Clearvite

Yuuummm! My favorite!!

After breakfast, I got ready to go run some errands. Top of the list was to pick up my wedding band and engagement ring! I took them in for a cleaning and maintenance and I haven’t had them for a week. I felt naked!! I decided to cut my errands list a little short to head back home and get some lunch a brewin’. While I was cooking, I had a piece of socca with coconut butter. 

It was a rainy, gloomy day so I thought soup would be a good fit. I put together a pretty decent pot.

Curried Cauliflower Soup

Ingredients:

  • T olive oil
  • head cauliflower, about 2 lbs, cut into florets
  • small onion, diced
  • 3 cloves garlic, minced
  • 1T curry powder
  • 1 tsp tarragon
  • 1/2 cayenne powder
  • 1 c chicken broth
  • 3 c water or more broth if you have it

How to:

Heat oil in a large soup pot. Add onions and sauté until translucent. Add garlic and cook until fragrant, about 2 minutes. Add cauliflower and spices and cook for 5 more minutes. Add broth and water, stir to combine. Bring to a slow boil and simmer until cauliflower is tender, about 12 minutes. Transfer contents of the pot to a blender, or use an immersion blender to make smooth. If the soup is too loose than what you dreamed up in your head, return to pot and simmer until it reaches the desired consistency.  Adjust seasonings as needed with salt and pepper, top with cilantro and enjoy!

I accompanied my soup with half a pear and a hard boiled egg as well. 

So it has been eight days since I’ve had any candy, treats, baked goods etc. so I decided it best that I give myself a little treat. What I have decided about myself is that I either swing really far to one side of healthy eating or I splurge way too much on the not-so-healthy side of things. I need some moderation and to me, that includes having a treat here or there. So today, I made another recipe out of my Babycakes cookbook. Blueberry muffins!!! Every ingredient falls within the parameters of my detox and there is no sugar in them, agave nectar is used instead.

I will not lie to you, I had two of these. One topped with coconut butter, and one without. I couldn’t resist. Therefore, muffins were my afternoon snack.

I had another little snack of a rice cake with smashed avocado and salsa before I headed out the door to go to youth group to rock a photograph scavenger hunt. My team got second place…cause they’re awesome!! 

When arriving home, I felt like I needed a little extra calories for the day (read: I was hungry) so I had some more leftovers of the chickpea dish with rice and another hard boiled egg. I really love eggs. They are so perfect and I just can’t get over the creaminess that a hard boiled version gives. It never disappoints. 

Well, another day down. I hope yours was a good one. Mine was. I got quite a few things done and I also was able to rest and bake. I also caught up on Biggest Loser and Parenthood, a couple of my favorite tv shows that I now watch all online. Having no cable is working out just fine for me! Don’t know if Kyle would say the same though….
